can be made diary free by using soya milk and non diary butter
Serves 4 – 6 Adults without salad and not too hurry!
Ingredients
25g butter
1 tbspoon Milk (can be soya)
3 cups cooked mashed potatoes
salt & pepper to taste
1 tbspoon butter
1 tbspoon plain flour
1 cup milk (can be soya)
500g smoked fish or tuna
1 tbspoon chopped parsley
2 hard boiled eggs chopped
1 onion
Instructions
Cook potatoes and mash with 25g butter and 1 tblsn of milk.
Boil eggs about 8 minutes, cool, shell, and chop ready to use
Grease 20 cm pie dish
Mark roux: Melt 1 tbsp butter in saucepan over low heat on cook top and sprinkle in flour, stir so that it does not go lumpy. Stir for 3 – 5 minutes and then gradually add in milk and stir with wooden spoon or wire whizz until mixed and thickesh. It should froth or boil, but not burn!!
fry up chopped oinion if using
(sometimes I add in 1/2 peas too)
Remove from heat
Place fishin pie dish, onion, eggs, peas, and then pour over sauce.
place mashed potatoe on top and you can decorate with grated cheese, slice tomatoe, pasley etc
Place in oven at 190 degrees C for about 20 minutes and serve by itself or with a salad, or garlic bread.
Tips: sometimes I add the juice of fish into sauce and you can add in tumeric or a bit of mustard to the sauce too
