Household favourite – I normally double the mixture

50g butter

1 tablespoon golden syrup

1/2 tsp baking soda

2 tbsp boiling water

1/2 cup plain flour

1/3 cup sugar

2/3 cup coconut

3/4 cup rolled oats (my favourite are Flemings)

Oven temp 180 degree C

I actually melt the butter and golden syrup on a low heat stove top saucepan. Boil the electrice jug and mix hot water with soda in small bowl. pour this mixture into butter syrup mixture and turn off heat.

Mix Flour, sugar, coconut and rolled oats in mixing bowl and add in syrup mixture, if a bit dry I add in another tsp of water.

Roll into balls, flatten on greased tray or use baking paper on tray and cook for about 15 minutes or golden brown

for an alternative biscuit, I sometimes add in raisins – 1/2 cup or so.
