Ginger Gems were once made by my Nan in an old cold range!!
Makes about 12
50g butter
¼ cup sugar
1 ½ teaspoons of ground ginger
1 egg
2 tablespoons golden syrup
1 cup plain flour
1 tsp Edmonds baking soda
½ cup mil or substitute (soya etc)
You need gem irons for this recipe
Preheat gem irons in oven at 200 degrees C.
Cream butter, sugar, and ginger in a bowls until light and fluffy. Add egg, beating well, followed by syrup.
Sift flour into creamed mixture. Stir to combine
Dissolve soda in milk
Quickly stir into creamed mixture.
Take irons out of oven and spray with oil or place a ¼ tsp of butter into each gem iron space and when sizzling put a spoon of mixture to just below the rim of the irons and return to oven for 10 minutes or until they have risen well and golden browna
