Salads

 Option1

2 cos lettuce

1 tomato

1 red capsicum or other colour

2 spring onions chopped

1 tablespoon chopped parsley and/ or 1 tablespoon of fresh mint

1 tablespoon of chopped basil

1 avocado chopped

1 tablespoon roasted peanuts or 1 tablespoon of roasted walnuts (Yummy) or 1 tablespoon of roasted almond

½ cucumber, sliced and diced.

(Great with Blue cheese dressing)

Option 2

Grate carrot (allow 1  medium size carrot for 2 – 3 people)

¼ cup of raisins  (per two people)

Squeeze lemon over to stop carrot going brown
